What do you get when you mix together sugar, cream cheese, whipped cream, marshmallows, and strawberries? Deliciousness! Big thank you to Evelyn Flesjer from Theodore for sending me her recipe. The crust is like a shortbread and for the strawberry fans out there, you will love this.
Creamy Strawberry Dessert
1 ½ cups flour
1 cup butter or margarine, softened
½ cup icing sugar
Preheat oven to 375°F. Beat all ingredients in medium bowl on low speed for 1 minute, scraping bowl constantly.
Beat for 2 minutes or until creamy. Spread in ungreased 9″ x 13″ pan. Bake for 12 to 15 minutes or until edges are golden brown. Cool completely.
1 – 8 oz. pkg. cream cheese, softened
¼ cup sugar
1 tsp. vanilla
3 cups cool whipped topping (thawed) or whipped cream
1 – 10 oz. pkg. frozen sweetened strawberries, thawed and undrained
2 cups plain miniature marshmallows
fresh strawberries, if desired for top
Beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until smooth.
Fold in whipped topping, strawberries and marshmallows.
Spread over cooled crust. Cover and refrigerate at least 8 hours until set. Garnish with fresh strawberries if desired. Store covered in refrigerator.
