This week was James Myer’s turn to take a stab at baking. He said this was his 5th time baking in his life, and I think he did a pretty good job. Big thank you to Joyce Paul from Yorkton for sending me her recipe for Cold Pan Cookies. James had fun learning what dates are and re-learning about his love for coconut. Cold Pan Cookies
¾ cup sugar
1 ½ cups dates
2 cups Rice Krispies
1 tsp. vanilla
Place eggs, sugar, and dates in a cold saucepan.
Add Rice Krispies and vanilla.
Drop rounded spoonfulls into coconut.
Roll until coated. Place cookies on cookie sheet and let cool.
Can use the coloured Rice Krispies to give it a festive look.
