Triple Chocolate Strip Cookies!

I hope you all are having a fantastic week. As you know, I love to bake and share my creations with all of you amazing people and my lovely co-workers at the station. This week, I decided to try something new and made Triple Chocolate Strip cookies. Let me tell you, they turned out absolutely delicious!

The recipe was a bit different than what I’m used to…you actually bake the dough in a log shape and then cut them after they’ve been baked. The result was a cookie that was almost like a brownie, with a rich and chewy texture. But they hit the spot so well!

I love trying out new recipes, and I’m so glad that this one was a hit with the office. It’s always so rewarding to see everyone enjoying something that I’ve made with love and care.

Ingredients:

  • Cookies
    • 2 cups all purpose flour
    • 1/2 cup unsweetened cocoa
    • 1/2 tsp. baking soda
    • 1/4 tsp. salt
    • 3/4 cup sugar
    • 1/2 cup firmly packed brown sugar
    • 3/4 cup margarine or butter, softened
    • 2 eggs
    • 2 cups semi-sweet chocolate chips
  • White Chocolate Glaze
    • 2 oz. white chocolate or vanilla-flavoured candy coating
  • Chocolate Glaze
    • 2 oz. semi-sweet chocolate, cut into pieces
    • 1/2 tsp. margarine or butter

Instructions:

  1. Heat oven to 350°F. Lightly grease 2 cookies sheets. In medium bowl, combine flour, cocoa, baking soda, and salt. In large bowl, beat sugar, brown sugar, and 3/4 cup margarine until light and fluffy. Add eggs; blend well. Stir in flour mixture; mix well. Stir in chocolate chips. Divide dough into 4 equal portions. Shape each portion into a 12-inch roll. Place 2 rolls 2 inches apart on each greased cookie sheet.
  2. Bake at 350°F for 14 to 18 minutes or until toothpick inserted in centre of each roll comes out almost clean. Remove from cookie sheets; cool on wire racks 10 minutes.
  3. In small heavy saucepan over low heat, melt white chocolate. Drizzle over 2 rolls. In same saucepan, melt semi-sweet chocolate and 1/2 teaspoon margarine. Drizzle over remaining 2 rolls. Let stand until glazes are set. Cut rolls diagonally into 1-inch strips.
