
S’mores are a camping classic: gooey marshmallows, melty chocolate, and crispy graham crackers all sandwiched together over a cozy fire. But here’s a little secret…my family and I have never loved graham crackers, so s’mores just weren’t our thing. Then one day, my mom had a genius idea: “Why don’t we just skip the graham crackers?”
That’s when pizzelle cookies entered the picture. If you haven’t tried them before, pizzelles are Italian waffle cookies with a pretty design, a light vanilla flavor, with none of the graininess you get from graham crackers. The best part? You can find them at the dollar store a lot, making them an easy and affordable swap.

We started bringing pizzelles on every camping trip, and pretty soon, my mom loved them so much she got her own pizzelle maker! Since pizzelles are bigger than graham crackers, you can squeeze in even more chocolate and marshmallow (always a win in my book). I like to get a little fancy and use chocolate squares with caramel in the center. So sweet, so gooey, and so good! My parents are a bit more traditional with milk chocolate, but sometimes they’ll mix it up with white chocolate too.

So if you’re not the biggest fan of classic s’mores, or if you just want to try something new, give pizzelle s’mores a shot. You might be surprised at how much you love them!
