If you know me, you know that my chocolate chip cookie recipe is a tried-and-true crowd-pleaser. But recently, I had a little spark of inspiration: why not take my classic cookies and turn them into something even more irresistible?
I should mention: I’m one of those people who loves a cold treat no matter what the weather’s like. Whether it’s a sunny 25°C or a frosty -25°C, you’ll find me sipping an iced cap, slurping a slurpee, or happily digging into some ice cream. So when I spotted a box of vanilla ice cream on sale, I couldn’t resist. The only problem? There was way too much for just me! That’s when I had a lightbulb moment: why not sandwich that ice cream between two of my chocolate chip cookies? Spoiler alert, it was a match made in dessert heaven.
And the best part? Making these cookie ice cream sandwiches is super easy! Here’s how you can do it, too:
1. Bake your favorite chocolate chip cookies.
Let them cool completely (trust me, you don’t want melted ice cream everywhere). This is the recipe I use: Chocolate Chip Cookies
2. Scoop the ice cream.
Grab about 1/4 cup of vanilla ice cream with a scoop and place it on the flat side of one cookie.
3. Make the sandwich.
Gently press a second cookie on top to seal in all that creamy goodness.
4. Wrap and freeze.
Wrap each sandwich in plastic wrap so they don’t stick together. Freeze for at least 4 hours (overnight is even better if you can wait that long).
Since there was no way I could eat them all myself, I brought the extras to the station! Danny even made a TikTok about them, which honestly made me feel pretty good about my baking skills.
