Between you and me, I’m not the biggest fan of pretzels, particularly hard pretzels. I find them to be the black jelly bean of party mixes so to speak. When a fast food place has a pretzel bun as a limited time treat I also so no thank you. What does all this mean? I’m not sure, but if you want to know how they make ’em I’ve got you covered.
Create homemade pretzels by mixing flour, yeast, sugar, and salt with warm water to form a soft dough. Knead until smooth, then let it rise until doubled in size. Divide the dough, roll into long ropes, and twist into classic pretzel shapes.
Prepare a baking soda bath by dissolving baking soda in boiling water. Dip each pretzel into the bath briefly—this step creates the signature chewy crust and deep brown color. Place pretzels on a parchment-lined baking sheet.
Brush each pretzel with beaten egg and sprinkle with coarse salt for flavor and crunch. Bake in a preheated oven at 220°C (425°F) until golden brown and puffy, usually about 12–15 minutes.
